Best apricots in turkey are produced in Malatya , in Turkey.
Every year in July there is a Apricot festival in turkey in Malatya.
Apricot fruit has a special aroma which no other fruits do have .
It can be eaten fresh in summer or as dried apricots in winter times.
Apricots are produced all the way from turkey till turkmenistan.
In turkey the earliest time you may eat apricots fresh is in june in Izmir.
this type of Apricots can only be eaten fresh due to its structure .
It can not be dried because the seeds can not be seperated from the flesh.
Apricots from Malatya are the ones that are dried because the fruit
( apricot ) can be seperated from the seed easly.
Apricots are dried by sulphur.
Apricots are good for liver , gives the skin a shining healthy color
, and has caroten and vitamin A .
You can try apricots as HOSAF - HOŞAF
Boil them with syrup . you can even add some " karanfil " .
You can also use the almonds and add some rose water or if you do it
with white wine it will have a more of a western taste.
With the mermalde of apricots you can join the cakes together.
You can also make " pestil " out of it.

Apricot sweets of the Turks is a very delicous desert which is considered
to be one the best in the world. You cook the dry apricots slowly with sherbet ( sugar syrup ) then fill
them up with kaymak ( cream ) pour some ground pistachoes on them and serve them cool.
there is almsot no one who wouldnt say no for this.
